Breakfast Jars: Overnight Oats

Those of you who have followed my personal FB for awhile know that I meal prep multiple meals at once, and generally in bulk. Tonight, while my dinner was in the oven, I made up a couple overnight oats jars for breakfast the rest of the week. Can’t go wrong with these ingredients!

There isn’t a whole lot to write about this recipe. It’s ridiculously simple, literally mix all the stuff in the jar and put it in the fridge. You need some sort of liquid with the yogurt and oats, otherwise it turns into concrete overnight, trust me. You can mix up the fruit, the spices, the flavor/type of milk to your own tastes.

I recently started doing Weight Watchers again, and the recipe as written below is 9 points. That may seem high, but it could be reduced by using unsweetened almond milk or fewer oats. It fits in my points though, as I try to spread out my consumption over the day (and I walk 5+ miles a day, so I have fit points to burn if I need a couple.)

Overnight Oats

Ingredients
  

  • 1/2 cup steel cut oats
  • 1/2 cup almond milk (Can use any milk you prefer)
  • 3/4 cup plain nonfat Greek yogurt
  • 1/4 cup fruit
  • Sprinkle of cinnamon/nutmeg/pie spice

Instructions
 

  • Add the oats, milk, yogurt, and spices to a pint mason jar
  • Stir well
  • Add the fruit and gently stir to mix it in
  • Refrigerate overnight and enjoy!
